We had a great homemade brunch this weekend! the winter menu was some delicious baked eggs in a cast iron skillet.
it is a simple and quick recipe that will take you less than 30 minutes.
- 6 eggs - lots and lots of bacon *yummmmm* -Feta cheese - Mozzarella cheese - 2 big potatoes (shredded) - Olive oil, salt, pepper
- Shred the potatoes, remove the water pressing them with a dish towel until they are dry - Heat your cast iron skillet with olive oil - add the potatoes and spread the potatoes as a big pancake - your potatoes are crispy and brown? you are ready! - add the eggs and sprinkle the remaining ingredients on top (cheeses and bacon - already baked) - Broil this in your oven for 10 minutes
